Grilled Chicken Kabobs w/ Crunchy Salsa Salad
When it’s too hot to cook in the kitchen, the grill is usually the answer, especially when it’s chicken kabobs with a cool, crunchy salad. Grilled Chicken Kabobs with Chunky Crunchy Salsa Salad is a favorite for a great summer meal; it’s easy, parts can be made ahead, and it’s scrumptious.

1 12 oz. package Frozen Spicy Sweet Corn & Black Beans
2 cups diced jicama
3/4 cup fresh jalapeno peppers, cored, seeded, and diced
1 red bell pepper, diced
3/4 cup fresh jalapeno peppers, seeded and chopped
1/2 cup diced red onions
1 cup shredded cheddar jack cheese
3 avocados, cut into chunks

1 cup reduced fat mayonnaise
1/3 cup medium salsa

1 head romaine lettuce, torn into bite-size pieces

11 ounces spicy nacho cheese tortilla chips, crushed

3 pounds boneless skinless chicken breast halves, cleaned, trimmed, and cut into 1" chunks
Fajita seasoning, or other favorite Mexican seasoning

  1. Place the package of spicy corn and black beans in the microwave and steam according to package directions - about 5 minutes.
  2. Remove from the microwave, place in a large bowl, stir, and let cool.
  3. Add the jicama, red bell peppers, jalapeno peppers, red onion, cheddar cheese, and avocados; mix well.
  4. Whisk together the mayonnaise and salsa; stir into the vegetable mixture. If making the salad portion ahead, cover and refrigerate at this point.
  5. Mix in the romaine lettuce and crushed tortilla chips.
  6. Toss the chicken chunks in the fajita seasoning; thread 3 or 4 pieces on skewers and grill, turning a couple of times, until the chicken is just barely cooked through, 7-10 minutes; do not overcook.
  7. For each serving, place a generous serving of salad on serving plates; top with chicken, and serve.
